Family Fun!
The weekend of the 19th most of the Perkins family got together and went skiing up at Wolf Mountain. We had such a blast! The little girls did such a wonderful job. Syd and Lexi were the cutest. They thought they were such big girls. It really was emotional for me. They have been skiing since they were three and now they are almost seven. They are the best of friends and they got on the lift all by themselves and went up and down the mountain all day long. By the end of the day they were both so tired they could hardly stand it but they each threw a fit when we told them it was time to go. Now Maelle, Abby and Madison did awesome as well. Abby was all about it. She is a go getter and was determined to be like the big girls. It was her first time skiing and Grandma, the teacher, was nervous about her because we all know that Abby is very stubborn but also very determined. She had a great time and can't wait to get up on the mountain again. Madison was so great. She looked like a little bullet up on the mountain. She is also a very determined child and will accomplish whatever challenge comes her way. Maelle struggled a little bit. She is also very stubborn! By mid-morning she had almost worn Grandma out but she got it down once again and now talks about going skiing all of the time. She can't wait to get up on that mountain again. I truly enjoyed seeing all of those girls skiing together. I just hope we can keep it up. Thanks to Grandma Perkins for being a teacher to all of us on the slopes. She does a great job. We all love her very much!

Freedom
The weekend after Christmas my beautiful cousin Rebecca got married in the Oakland CA, Temple. So the Perkins kids thought it would be fun to take a vacation without the kiddos. Andrea and I flew out, while our great husbands stayed home with the kids, and the rest of the clan drove. Bud and Melissa unfortunately weren't able to come. We had a great time!
Christmas!
Dinner Whoes!
OK! I just need to vent. I am so tired of making dinner and having my kids throw fits because they don't like it! If it's not Progresso's Chicken Noodle soup then forget it. Tonight I made this super yummy chicken pot pie and of course Maelle threw a tantrum. Going to bed without dinner is becoming the norm around here. I've posted the chicken pot pie recipe so at least some one other than Dave and I can enjoy it!
Chicken Pot Pie
1 13 oz can canned chicken breast (drained)
1 cup chicken broth
1 cup whipping cream
1 1/2 tsp. salt
1/2 tsp. pepper
2 Tbsp. flour
5 Tbsp. butter
1 medium onion, chopped
3 carrots, peeled and chopped
1/2 cup peas
3 potatoes peeled and cubed
1 Pillsbury pie crust
Saute vegetables, potatoes and chopped onion in butter. Make sure vegetables are soft. Add flour and chicken broth; stir in cream. Cook on low heat for 5 minutes. Stir in salt, pepper and chicken. Place ingredients in a greased 8 x 11.5 inch dish (2 quart) and cover with pie crust, cutting slits in the top for ventilation. Bake at 425 degrees for 20 to 25 minutes.
ENJOY!!
